Passwords get brute forced all the time. Unless you use a very long password it's not much protection.
Not trusting device entropy is why everybody is suddenly obsessed with rolling dice, for better or worse.
It doesn't really matter how the entropy is generated as long as the generation of it is not reproduceable.
That was the issue with the Coldcards. The attacker knew they were generating grossly insufficient entropy and also had knowledge of what was being used to seed the PRNG, specifically the device UID and boot clock.
It was bad enough that the devices were only using a 40 bit fraction of the key space which is an incomprehensibly tiny fraction, but the attacker knew exactly which fraction of the key space to look in.

Having your own email server is very hard for most people, and using one makes your messages to almost certainly to be rejected or flagged spam by mainstream providers.
